TRASTEVERE: BETWEEN ANCIENT TREATMENTS AND KOSHER CUISINE
Apart from dividing the center of Rome, the Tiber also divides its various gastronomic traditions. On the one hand, the neighborhood of popular origins has become over the years a beating heart of Roman life, which preserves intact the atmosphere of authentic Roman trattorias and the best pizza in Rome. Augusto, in the heart of Trastevere, is a well known place and has in its menu typical Roman recipes. The neighborhood also hosts many pizzerias, such as Dar Poeta, with its thin and crispy Roman pizza, and the Ai Marmi pizzeria, where the supplì are also to be tried. Glass Hostaria’s haute cuisine is one of the many starred restaurants in the city. Also in Trastevere, La trattoria Da Enzo is instead the place to find dishes that combine tradition and experimentation.
On the other side of the river, the Roman Kosher cuisine, typical of the ghetto of Rome, is a unique combination that derives from the union of Jewish culinary traditions with the recipes of traditional Roman cuisine.Fillets of cod, zucchini carbonara and tonnarelli with chicory and bottarga are some of the recipes of this local tradition. You can not miss the Nonna Betta restaurant, at the Portico di Ottavia, where you can find the artichoke alla Giudia and the typical dishes of kosher cuisine. The recommended address is to the Ghetto together with the otherwise carbonara of Umberto Pavoncello made with dried beef instead of the bacon.
While in the Garbatella district, the Ardito restaurant offers specialties of Rome such as tripe alla romana and coratella, along with the most classic and well-known dishes, making it a place of gastronomic cult for the natives.
